With the weather warming up and days getting longer, I find mornings more exciting lately. I’m up when the sun is already making an appearance, and fruit in the grocery store is starting to be juicy, sweet, and dare I say- local?! After many months of cringing about eating grapes from Chile or Central American bananas, USA logos are appearing and I feel good about that.
This fruit salad is a great way to start the day, whether it be Monday morning or Sunday at noon with friends. I made it for a brunch with Kelsey, and the tart yogurt with honey and citrus zest brightened the already-lively flavors in this salad while allowing us to indulge in waffles. Substitute with what you have on hand!
Sunrise Fruit Salad (serves 4-6)
- 1/2 cantaloupe
- 1 granny smith apple
- 2 oranges
- 1 banana
- handful of blackberries
- 6 oz plain yogurt
- 1 tbsp honey
- 2 tsp orange & lemon zest
- top with granola
Chop the fruit and section the oranges to remove any bitterness from the pith.
Zest the orange peel with or without lemon peel as well, and mix into your plain yogurt with some honey.
Toss everything together and top with some crunchy granola for more texture.

Fresh fruit is what I look forward to most in the Spring / Summer! We just made a costco trip yesterday and cut pineapple, mangos, etc to eat for days and days! Great mix you put together!
