With the days doing nothing but getting shorter and Noah and I both trying to get in some exercise daily after work, dinner has been a rush some days. I love that during the day, I have time to browse the internet for ideas and recipes from my favorite bloggers- but a lot of us don’t have the hour of prep time to make it happen. These sweet potato burrito bowls came together in 20 minutes, and I appreciated how hearty and delicious the flavors were for such a quick meal thrown together.
For those days when you struggle to put soup in the microwave for dinner, try this out. A microwaved sweet potato and 10 minute quick cooking farro from my Trader Joe’s stash were my shortcuts- but quinoa cooks up nicely in 20 minutes while everything else marinates together. Noah and I ate this for dinner, and for lunch the next day- I might argue that it tasted better the next day! Give my new favorite 20 minute burrito bowl recipe a try!
20 Minute Sweet Potato Burrito Bowls (serves 4)
- 1 c dry farro (substitute quinoa or your favorite grain here)
- 1 large sweet potato
- 1 can black beans
- 1 can diced tomatoes
- 1 tbsp taco seasoning
- Optional chopped jalapeno
- Pint of cherry tomatoes
- 1/4 red onion
- 1/2 lime
- Toppings: avocado, cilantro, Greek yogurt, fried eggs, hot sauce
Let your chosen grain begin cooking, and pop your sweet potato in the microwave on high for around 5 minutes with a few punctures of a fork to avoid sweet explosions. Open the cans of beans and diced tomatoes (drained) into a large pot on medium heat.
Mix chopped jalapeno and taco seasoning into the bean and tomato mixture, adding the cooked sweet potato in chunks (with the skin) when it is ready. You will let this simmer together for 10 minutes while your grains finish cooking, mixing every couple minutes.
Chop your cherry tomatoes and red onion together, and top with the juice of 1/2 a lime and cilantro if you’re fancy. Chop up avocado in the meantime as well, and fry an egg if you want to jazz up the bowl even further. When the grains are finished cooking, scoop them into bowls and top with the sweet potato and bean mixture, the cherry tomato salsa, and your other favorite toppings.
