People have been raving about these no-bake bites/balls on the web for eons. I am very very late on the bandwagon of trying them. I’ve seen some with chocolate, some with coconut, others with lots of different kinds of nut butters. I recently indulged in some cinnamon raisin peanut butter (!!), and if you spread it on some toast it is a tasty treat. It gave me inspiration.
Finally realizing about the genius combo that cinnamon/raisin/peanut butter can be (like I said, late on the bandwagon), I thought I would try these no-bake bites with this newfangled combo. These are relatively healthy, and I have nibbled on them for a breakfast on the run, a snack before working out, and even dessert when I needed to kick my sweet tooth. These are easily played with- swap in/out ingredients depending on what you have!
Cinnamon Raisin Peanut Butter Bites (makes ~11 depending on size)
- 3/4 c rolled oats
- 1/2 c creamy peanut butter
- 2 tbsp honey
- 2 tsp cinnamon
- 1 tsp vanilla
- 1 tsp chia seeds
- 1 tsp ground flax
- 1 tbsp slivered/sliced almonds
- 1 tbsp chopped raisins
- 1/4 c to 1/2 c sesame seeds for rolling
Combine all the ingredients except for the sesame seeds in a bowl. If your peanut butter is firm, you can microwave it on 10 second intervals until it is drippy and easy to mix. Make sure to chop up your raisins and almonds if they are whole.
With clean hands (sorry, public health professional over here), roll the mixture into balls a little smaller than a golf ball. You should get 9-12. Pour the sesame seeds into a small bowl and roll the balls in the seeds. Refrigerate for an hour and enjoy! I recommend keeping them in the fridge, but if you think they’re too hard, leave them out for 20 minutes before eating.
