I hope everyone had a fun Valentines Day, either with friends or significant others or family. I was lucky enough to speak to/be with all of my favorite people yesterday, and I feel so happy knowing that I could make their day with a phone call, text.. or a brownie. These brownies are a dangerous cross between fudge and brownie decadence, with two different types of chocolate, a yogurt swirl, and raspberry sauce on top- but not the worst thing you could ever eat thanks to some whole wheat flour and greek yogurt (small portion sizes help too but hey, treat yo self).
Because I’m corny and I think holidays make a great excuse to love on your favorite people, last night I wrote down some quotes for all of us to appreciate focusing on friendship. I know it helped me remember what is important! My favorite was “Love is just a word until friends come along and give it meaning.”
Yogurt Swirl Brownies with Raspberry Sauce (serves 9-12)
- 1 c whole wheat flour (or all purpose)
- 1/2 tsp salt
- 1 & 1/4 c sugar
- 1/3 c cocoa powder
- 4 oz dark chocolate (I used 60%)
- 3/4 c unsalted butter
- 3 eggs
- 1 tbsp vanilla extract
- 3 oz plain Greek yogurt
- 1 tsp vanilla extract
- 1 tsp sugar
- 1 c frozen raspberries
- 1/4 c sugar
- 1 tbsp cornstarch

Preheat the oven to 350. Combine dry ingredients in a large bowl. Melt your chocolate bar in the microwave on 30 second intervals. Add butter to the chocolate and stir until melted. Combine wet mixture into the dry ingredients and beat in the eggs and 1 tbsp vanilla extract. Pour your batter into a 8 X 8 baking dish lined with parchment paper.
Mix together your plain Greek yogurt, 1 tsp vanilla and 1 tsp sugar (or honey/vanilla flavored Greek yogurt). Drop it in dollops on top of the brownie batter and use a knife to swirl it around. Pop in oven. On the stove, combine frozen raspberries, cornstarch, and sugar and 1/4 c water and simmer on low until a sauce forms.
Bake for ~30 minutes, but expect these brownies to still leave some residue if you stick it with a toothpick/knife because they are so fudgey and dense. Cut into 9-12 squares depending on how large you want them to be and serve immediately. Top with the warm raspberry sauce.
